Reaction: FUOM isomerises alpha-Fuc to beta-Fuc
- in pathway: GDP-fucose biosynthesis 
  L-Fucose (6-deoxy-L-galactose) exists in two different forms, alpha-L-fucose (29.5%) and beta-L-fucose (70.5%). The beta-form is metabolised through the salvage pathway to ultimately form GDP-fucose. Fucose mutarotase (FUOM) is involved in the anomeric conversions of monosaccharides, converting alpha-Fuc to beta-Fuc (Timson & Reece 2003).
